Mango Curry Chicken on a Tuesday

It's finally Wednesday and for that - I'm glad, but I want to tell you about my Tuesday:

Woke up.  Went to work.  Ate breakfast.  Worked more.  Ate lunch.  Worked more.  Thought about dinner.  Made a decision on dinner:  Mango Curry Chicken for One

Ingredients:
1 cup of coconut water
1 cup of frozen unsweetened mango
1 tablespoon curry powder (change for your taste)
3 oz cooked chunk chicken
1 cup of cooked brown rice


Simmer the frozen mango in coconut water until thawed.  Use immersion blender to mix until almost smooth (I left mine a bit chunky).  Add curry and whisk until mixed.  Add cooked chicken and allow to simmer until sauce thickens, this only takes a few minutes. 

Place rice on plate, pour delicious concoction over rice.  Garnish with chives if desired.  Serve with vegetable of your choice – I had kale!

I've been working out a lot more and trying to acheive some weight loss goals before May when I have to get into mildly attractive/dressy clothing for my big trip.

Spin

I love spinning.  The music is amazing, the teachers are terrific, and the workout is stellar! 
This past Saturday I went to spinning and loved every moment.
The things I love about spinning are:
  1. Group setting
  2. You can "pick your challenge" level
  3. The scale after class

Mac & Cheese Thursday

Today, I was worried.  I was worried that the peanut butter jar that I was cleaning to recycle would become a danger to a stranger.  Well, I wasn't that worried, but I really did wonder -- when the manufacturers melt this down and recycle it, will the residual peanut butter properties cause an allergic reaction for someone?  Think on that one!

With all of the worry running through my brain I needed comfort food - quickly!  Here's what I came up with:
Cauliflower Mac & Cheese

What you need:
1/4 Head Cooked Cauliflower
1 Cup Cooked Whole Wheat Pasta
1/4 Cup Reduced Fat Shredded Cheddar Cheese (I used Cabot, but that could just be a Vermont thing!)
1 Tbsp of Reduced Fat Parmesan Cheese

With an immersion blender, puree the cooked cauliflower until smooth.  Add cheeses and pasta.  Throw into an oven at 350 degrees if you're into the crunchy top like me!
